Chicken Curry Salad Sandwich

Curry powder, walnuts and grapes add flavor and interest to this traditional chicken salad. It whips up quickly, and can be stored in the fridge to be enjoyed the next day.


2 tablespoons light mayonnaise

¼ teaspoon curry powder

4 slices golden roasted breast of chicken, chopped

¼ cup glazed walnuts, chopped

6 green grapes, cut into quarters

¼ cup arugula or baby spinach leaves

2 slices Sara Lee® Delightful™ Healthy Multi Grain Bread


Combine mayonnaise and curry in a medium bowl.  Add chicken, walnuts, and grapes.  Stir until combined.

Place arugula on one slice of bread.  Top with chicken salad and remaining bread slice.  Cut in half and serve.
